Hot or Cold Soups

Potato Soup

  • 2 cups diced peeled raw potatoes
  • 1/2 cup diced celery
  • 1/4 cup diced onions
  • 3/4 cup water
  • 2 tablespoons salad oil
  • 2 tablespoons flour
  • 2 cups milk
  • Dash pepper
  • Salt to taste

decoration and also to improve the taste:
1/2 cup sour cream, 1 tablespoon fresh chopped parsley, 1 tablespoon bacon cubes.

Bring potatoes, cerlery, onion and water to a boil, in a large saucepan. Cover and simmer for 10-12 minutes, or until verggies are tender. 
In an other large saucepan, heat oil over low heat. Stir in flour, then gradually stir in milk. Cook until it becomes thick and smooth. Add veggies with cooking water. Cook over low heat 5-8 minutes.
Makes about 4 servings.

Serve with a tablespoon of sour cream, fresh parsley, and some fried bacon cubes.
It is fast and simple, but tastes good. 
Perfect if you have unexpected company.
